Homemade

Random post. pictures of food that can easily be made at home.

Pesto Egg White & Pastrami on Multigrain Ciabatta

scramble some egg whites (i already mentioned that i don't like yolks in my previous post) and right before they're done, add a dollop of pesto (storebought or homemade) and cook throughout.  layer on pastrami or any deli meat.. scrambled pesto eggs and sharp provolone.  I have a panini grill so i pressed my sandwich for a few minutes to melt the cheese.  i only put one slice of pastrami in my sandwhich which is why the pastrami layer may looks a little lame in this pic. sandwich still tasted awesome! :)

DDukbokki
with a side of fried homemade dumplings
Pretty easy to make.  Dissolve some red pepper paste into some water and heat up in a deep pan.  Add some sugar if you like.  Once boiling, add the rice cakes (we used slices this time but more often seen with the tubular rice cakes).  Just before the rice cakes and fully cooked through, add in your vegetables (onions scallions shredded cabbage etc) and tempura (aka fish cake) and just let it all bubble together merrily until the rice cakes are a nice chewy texture with no bite in the middle.  I love dipping eggs and dumplings in the sauce  :D yummmm! ddukbokki is goes very nicely with a simple soup (miso soup, udon soup, beef broth) to balance out the spicy.

Eggplant Parmesan
Take an eggplant and slice into discs and cover with flour.

Egg wash and bread crumbs (mine seasoned with a garlic & herb seasoning)
Pan fry (or deep fry) until a nice crust is formed.

To get rid of my hardening ciabatta rolls, i made an eggplant parm sandwich :)

Enjoy the pictures!
